Almond Berry Tart Cake
Tart Dough
Ingredients
2 cups enriched self rising flour
1/4 cup butter
2 tbsp. shortening
1/4 to 1/2 cup cold water
1/2 cup berry jam
Directions
Grease and flour an 8-inch cake pan. Cut butter and shortening into the flour until the mixture is coarse crumbs. Blend in water until the mixture forms a ball and makes a dough. Roll out the dough on a floured surface. Line the pan and flute edges with this dough. Spread the berry jam evenly over the bottom.
Cake Batter
Ingredients
2 eggs
1/2 cup butter
1/2 cup sugar
3/4 cup enriched self rising flour
1/4 tsp. almond extract
1/2 cup sliced almonds
Directions
Melt the butter over low heat and blend in the sugar well. Beat in the eggs one at a time. Add the almond extract, stir in the flour and blend well.
To assemble: Pour the cake batter into the prepared tart shell. Arrange sliced almonds on top of the batter.
Bake in a preheated 425 degree oven for 10 minutes. Reduce the heat to 350 degrees and bake for 35 to 40 minutes or until the cake tests done.
