Almond Flip-top Cake with Orange Filling

Ingredients
2 tsp. butter or margarine
1 tbsp. sugar
1/3 cup chopped almonds
1 loaf size white or yellow cake mix
Orange Filling (below)

Directions
Melt the butter in an 8x8x2-inch pan. Spread over the bottom and sprinkle with sugar, then with the almonds.

Prepare the cake according to the directions on the package. Carefully pour the cake batter over the almonds in the pan.

Bake at 375 degrees F. for 25 to 30 minutes. Invert on a rack and allow to cool. Split the cake into 2 layers and spread cooled Orange Filling between the layers. Makes 9 squares.

Orange Filling

Ingredients
1/2 cup sugar
3 tbsp. all-purpose flour
dash salt
1/2 cup orange juice
1 egg, beaten
1 tbsp. butter or margarine
2 tsp. lemon juice
2 tsp. grated orange peel

Directions
Thoroughly mix together sugar, flour and salt. Stir in the orange juice. Cook over low heat, stirring constantly, until the mixture thickens and becomes clear.

Stir a small amount of the hot mixture into the beaten egg, then stir the egg mixture into the remaining hot mixture. Cook and stir over low heat 3 to 4 minutes longer. Blend in the butter, lemon juice and orange peel. Cool the mixture thoroughly. Makes 3/4 cup filling.
