Almond Roca
Ingredients
1 lb. butter
2 cups sugar
2 tbsp. water
2-1/2 cups finely chopped almonds
2 large milk chocolate bars
Directions
In a sauce pan melt the butter, sugar and water. Cook until the temperature registers 250 degrees on a candy thermometer. Do not stir while cooking this hot mixture. Add 1 cup chopped almonds and cook to 300 degrees. Pour the mixture, spreading evenly, on one end of a long piece of foil.
Melt one chocolate bar in a double boiler over hot water. Pour the melted chocolate over the hot candy and sprinkle with chopped almonds. When completely cool and the chocolate is set, turn the candy over onto the other half of the foil. Melt the remaining chocolate bar and spread chocolate on the other side of the candy, again sprinkling with more chopped almonds. When all of the chocolate has hardened, break into pieces.
