Aloha Burger
Ingredients
1 can (9 oz.) pineapple slices
1 lb. ground beef
1 tsp. salt
dash pepper
Island Sauce
Reserved pineapple syrup
1/2 cup catsup
1/4 cup brown sugar
2 tsp. Worcestershire sauce
a few drops of liquid smoke
Directions
Make Island sauce by mixing the ingredients and heat to boiling.
Drain the pineapple, reserving 2 tablespoons of syrup for sauce. Season the meat with salt and pepper. Press a tablespoon of meat into the center of each pineapple slice, overlapping meat on pineapple around the center on both sides of the slice so the meat won't fall out while cooking. Shape the remaining meat into four patties, slightly larger in diameter than the pineapple slices. Broil the burgers on a grill over hot coals for 12 to 15 minutes, turning once.
Broil the meat filled pineapple slices, turning carefully and brushing with Island Sauce until the meat is done and the pineapple is glazed.
To assemble, place each burger atop a bun half or slice of toast. Top with a pineapple burger. Garnish with a kabob of cherry tomato and a green olive.
