Angel Food Cake

Ingredients
1 cup sifted cake flour
1-1/2 cups granulated sugar
1-1/2 cups egg whites (10)
1/2 tsp. salt
1-1/2 tsp. cream of tartar
1 tsp. vanilla extract
1 tsp. almond extract

Directions
Preheat oven to 375 degrees.

Sift cake flour and 3/4 cup sugar together four times.

Add salt to egg whites and beat until foamy. Add cream of tartar and extracts and continue beating until egg whites will hold up in soft peaks but are still moist and glossy. Add remaining 3/4 cup sugar, sprinkling 2 tablespoons at a time over whites, beating after each addition.

Fold in flour mixture in 4 portions gently but thoroughly, being careful not to decrease volume. Pour into a 10 inch ungreased tube pan. Cut through batter with a spatula to release large air bubbles.

Bake 35 to 45 minutes in preheated 375 degree oven.

As soon as the cake is removed from the oven invert on a cake rack to cool.
