Apple and Herb Roasted Turkey
Ingredients
1/4 cup minced fresh sage
1/4 cup minced fresh rosemary
1 turkey, about 14 pounds
1 medium apple, quartered
1 medium onion, halved
1 celery rib, halved
1/2 cup melted butter
1/2 cup warm apple jelly
Directions
Combine the sage and rosemary. Using your fingers, carefully loosen the skin from the turkey breast then rub the herbs beneath the skin. Secure the skin to the underside of the breast with toothpicks. Place the turkey breast side up on a rack in a roasting pan. Stuff the turkey with the apple, onion and celery. Brush with melted butter.
Roast, uncovered, at 325 F for 3-1/2 hours or until a meat thermometer reads 170 F. Baste occasionally with pan drippings. If the turkey browns too quickly cover loosely with foil. Brush with apple jelly. Cover and allow to stand for at least 15 minutes before removing the toothpicks and carving. Yield is approximately 14 servings.
