Apple Coconut Nut Cake

Ingredients
2 cups sugar
3 eggs
1-1/4 cups cooking oil
1/4 tsp. salt
1/4 cup orange juice
3 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
1 cup peeled and chopped raw apple
1 cup shredded coconut
1 cup chopped nuts

Directions
Preheat oven to 325 degrees.

Mix all of the ingredients except the apple, coconut and nuts in the order given. Using a spoon, mix in the apples, coconut and nuts. Turn the batter into a greased and floured tube pan.

Bake at 325 degrees for 1-1/2 hours. When the cake is almost done prepare the sauce.

Sauce

Ingredients
6 tbsp. butter
1 cup sugar
1/2 tsp. baking soda
1/2 cup buttermilk

Directions
Melt the butter and stir in the sugar, baking soda and buttermilk. Bring to a boil. Pour this sauce over the hot cake while it is still in the pan. Wait one hour before turning the cake out of the pan.
