Apple Muffins
Ingredients
1-1/2 cups flour
1/2 cup sugar
1-1/2 tsp. baking powder
1/4 cup brown sugar
1 tsp. cinnamon
1 egg, slightly beaten
1/2 cup milk
1/4 cup vegetable oil
3 apples, peeled, cored and diced
Directions
Preheat oven to 400 degrees F.
In a large mixing bowl, combine the flour, sugar, baking powder, brown sugar and the cinnamon. Add the egg, milk, oil and apples. Stir until the mixture is blended without overmixing.
Transfer the batter into greased and sugared muffin tins, filling each about 3/4 full.
Bake at 400 degrees F. for 15 to 18 minutes if using a 6-muffin tin, or 10 to 11 minutes if using a 12-muffin tin, or until each muffin is golden brown. Cool on a wire rack or serve warm. Makes 6 to 12 muffins.
