Apple Pudding
Ingredients
4 or 5 medium size apples
3 tbsp. sugar
1/4 cup raisins
1/4 cup nuts, chopped
3 tsp. butter
4 eggs, separated
1/2 cup sugar
1/2 cup flour
1/4 tsp. salt
1/4 cup water
1 tsp. vanilla
Directions
Pare and core the apples, leaving them whole. Arrange the apples in a well-greased spring form pan.
Mix 3 tablespoons sugar, raisins and nuts together. Fill centers of the apples and dot with butter.
Beat the egg yolks until they are thick and lemon colored. Add 1/2 cup sugar and beat well. Add flour and water alternately to the egg yolks. Beat egg whites until stiff and fold into the egg yolk mixture. Add vanilla. Pour over apples.
Bake at 350 degrees for 1 hour.
