Apricot Nut Bread
Ingredients
1/2 cup dried apricots
1 cup water
1 egg
1 cup sugar
2 tablespoons butter, melted
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup orange juice
1/4 cup water
1 cup chopped walnuts or pecans
Directions
Combine the apricots with 1 cup of water in a small pan. Bring to a boil. Remove the pan from the heat and cover. Allow to stand for 30 minutes then Drain well. Finely chop the apricots and set aside.
In a large bowl, beat the egg with a fork until thick and lemon colored. Stir in the sugar and melted butter.
Combine the flour, baking powder, baking soda and salt. Add to the creamed mixture alternatively with the orange juice and 1/4 cup water, stirring after each addition. Stir in the apricots and chopped nuts.
Spoon the mixture into a greased 9x5x3-inch loaf pan. Bake at 350 degrees F for 1 hour or until a toothpick comes out clean. Cool in the pan for 10 to 20 minutes. Remove the bread from the pan and place on a wire rack to finish cooling.
