Apricot or Raisin Bran Muffins

Ingredients
1-1/3 cups sifted flour
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 cups whole bran cereal
1/2 cup dried apricots, finely chopped --or-- 1/2 cup raisins
1/3 cup butter or margarine, softened
1/2 cup brown sugar, packed firm
2 tbsp. light molasses
1 egg
1 cup milk

Directions
Preheat oven to 400 degrees. Grease bottoms of 16 2-1/2 inch muffin pan cups.

Sift dry ingredients in a medium size bowl using a wooden spoon. Add bran cereal and fruit, mix well. In a large bowl cream butter with sugar and molasses. Add flour mixture, then milk. Stir with a fork only until all is moist. Do not beat.

Spoon into muffin tins 2/3 full. Bake for 25 minutes.
