Aunt Susan’s Oatmeal Cookies

Ingredients
1 cup shortening, butter or margarine
1 cup brown sugar
1 cup granulated sugar
2 beaten eggs
1 tsp. vanilla
1-1/2 cups sifted flour
3 cups quick oats
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 cup broken nut meats

Directions
Cream shortening and sugars until light and fluffy. Add vanilla then beaten eggs. Sift flour with salt, baking soda and cinnamon and add to mixture. Add oatmeal and nut meats. Form into two long rolls. Wrap in waxed paper and chill overnight.

Slice 1/4 inch thick and bake on an ungreased cookie sheet at 350 degrees for 10 minutes. Do not over bake. Makes 5 dozen.
