Baked Ice Cream Pie
Ingredients
3 egg whites
1/4 tsp. salt
1/2 tsp. cream of tartar
1 tsp. vanilla
6 tbsp. sugar
1 quart very firm ice cream (any flavor)
1 deep 8-inch baked pie shell
Directions
Preheat oven to 450 degrees. Combine egg whites, salt, cream of tartar and vanilla. Beat to rounded peak stage. Add sugar, one teaspoon at a time and beat after each addition. After all sugar is added, continue beating until meringue is glossy and forms stiff peaks. Spoon ice cream into cold baked pie shell. Top with meringue.
Bake in preheated oven 3 to 5 minutes at 450 degrees, or until meringue is delicate brown. Serve immediately.
