Baked Sugar Snap Peas
Ingredients
1 lb. sugar snap peas
2 tbsp. olive oil
2 tbsp. minced shallots
2 tsp. chopped fresh thyme
salt to taste
Directions
Preheat oven to 450 degrees F.
Mix peas and oil in a bowl until the peas are coated, then arrange on a baking sheet in a single layer. Sprinkle the peas with the shallots, thyme and salt.
Bake for 7 minutes or until tender but still firm. Makes 4 servings.
