Beef Fajitas
Ingredients
2 lb. tender boneless steak
3 tbsp. soy sauce
2 tbsp. fresh lime juice
2 tbsp. minced green onions
1-1/2 tbsp. Worcestershire sauce
2 tsp. sugar
1/4 tsp. freshly ground pepper
jumbo sized flour tortillas
Directions
Place the steak in a shallow glass baking dish. Blend together the remaining ingredients and coat both sides of the steak well using all of the marinade. Cover and refrigerate for 4 hours, turning the steak occasionally.
Remove the steak from the marinade and broil to desired doneness. Slice the steak diagonally in thin strips.
Serve the strips of steak with flour tortillas and a variety of toppings. The toppings suggested are shredded cheeses (cheddar, jack, pepper jack), diced tomatoes, chopped cilantro, sour cream, fresh salsa or a pico de gallo, guacamole or sliced avocado. Makes 4 to 6 servings.
