Beef Porcupines
Ingredients
1 lb. ground beef
1/2 cup uncooked rice
1/4 cup chopped onion
1 tsp. salt
1/4 tsp. pepper
2 tbsp. vegetable oil
1 can (15-oz.) tomato sauce
1 cup water
Directions
Mix the beef, uncooked rice, chopped onion and seasonings together. Form the mixture into small balls. Fry the balls in hot oil, turning frequently, until they are light brown but not crusty on all sides.
Add the tomato sauce and water. Mix well. Cover and simmer about 45 minutes. Serves 4.
