Beef Stroganoff #1
Ingredients
2 lbs. lean sirloin
4 tbsp. butter
1/2 lb. mushrooms, washed and sliced
1/2 cup tomato juice
1 clove garlic, peeled and crushed
2 tsp. salt
1/8 tsp. pepper
1 10-1/2 oz. can cream of mushroom soup
1 cup sour cream
Directions
Trim fat from the beef and cut the meat into 3 x 1-1/2 inch strips. Melt half of the butter, add the mushrooms and saute until golden. Remove and add the rest of the butter. Stir in the meat and cook for 4 minutes. Add the tomato juice and garlic.
Cover and simmer for 30 to 40 minutes. Stir the seasonings, soup and sour cream into the mixture just before serving and heat thoroughly. Serve with rice or noodles.
