Beefy Shepherd's Pie
Ingredients
1 lb. ground beef
1 medium onion, chopped
1 jar (12 oz.) mushroom or beef gravy
1-1/2 cups frozen peas
1/4 tsp. pepper (or to taste)
3 cups prepared mashed potatoes, warmed
2 tbsp. shredded Parmesan cheese
Directions
Preheat oven to 450 degrees F.
Brown the ground beef with the onion in a large nonstick skillet over medium heat for about 10 minutes, or until the beef is browned, stirring to break up the beef in 3/4-inch crumbles. Pour off the drippings.
Stir in the gravy and peas then season to taste with pepper. Spoon the beef mixture into a 2-quart baking dish then top with the mashed potatoes, spreading the potatoes evenly over the beef. Sprinkle with Parmesan cheese.
Bake for 25 to 30 minutes, or until bubbly and the cheese begins to brown. Makes 4 servings.
