Brazil Nut Date Cake
Ingredients
3 cups Brazil nuts
1 lb. pitted dates
1 cup drained maraschino cherries
3/4 cup sifted all-purpose flour
3/4 cup sugar
1/2 tsp. baking powder
1/2 tsp. salt
3 eggs
1 tsp. vanilla
Directions
Put the Brazil nuts, dates and maraschino cherries in a large bowl. Sift the flour, sugar, baking powder and salt over the nuts and fruits. Mix with your hands until the nuts and fruits are coated.
Beat the eggs until they are foamy, then add the vanilla. Stir the egg mixture into the nuts and fruits mixture until all is well mixed. Turn the batter into a greased and waxed paper lined 9x5x2-inch pan and spread evenly.
Bake at 300 degrees for 1 hour 45 minutes. Cool the cake before slicing.
