Bread Pudding
Ingredients
1 loaf stale French or Italian bread
2-1/2 cups coffee or 2 cups coffee plus 1/2 cup milk
1 cup raisins
6 tbsp. butter or margarine
3/4 cup firmly packed brown sugar
1 tsp. vanilla
2 eggs, slightly beaten
1/4 tsp. cinnamon
Directions
Line an 8-inch round cake pan with aluminum foil, then grease the foil. Set aside.
Break up the bread and place the pieces into a mixing bowl. Add the coffee and allow to soak for about 20 minutes. Cover the raisins with water, then drain when plump.
Combine the bread, raisins and remaining ingredients. Mix together with your hands. Pour the mixture into the prepared cake pan.
Bake at 375 degrees F. for 1 hour or until a knife inserted in the center comes out clean. Turn out onto a plate then peel off the foil. Reverse onto a serving plate and glaze.
To make glaze: Mix 1 cup of sifted confectioners' sugar with 1 to 2 tablespoons of water until smooth. Spread on the cake with a metal spatula.
Makes six servings.
