Buckwheat Cakes

Ingredients
1 cup cooked brown rice
3/4 cup buckwheat flour
1 tsp. baking powder
2 eggs, separated
2 tbsp. shortening
1 cup milk

Directions
Using an electric mixer, beat eggs until peaks form. Mix remaining ingredients and fold in the beaten egg whites.

Cook on a greased griddle until lightly browned.
