Cabbage Soup

Ingredients
4 potatoes
1/2 medium cabbage (4 cups chopped)
4 leeks or green onions
1-1/2 quart boiling water
1 tsp. salt
1/4 tsp. pepper
1/2 cup heavy cream
2 tbsp. butter or margarine

Directions
Pare the potatoes. Cut potatoes, cabbage and leeks or green onions into small pieces. Place all in a kettle along with boiling water, salt and pepper.

Cook for 15 to 20 minutes or until all of the vegetables are tender. Turn the heat to low, add cream and butter or margarine and serve hot.

A sprinkling of finely chopped hard-cooked egg on top makes a nice finishing touch. Serves 8.
