Candied Fruit Squares
Ingredients
1-2/3 cup chopped walnuts
1/2 cup granulated sugar
1/2 cup brown sugar, firmly packed
2/3 cup light corn syrup
2 cans (4-oz. each) shredded coconut
1 jar (4-oz.) diced mixed candied fruit
1/2 tsp. salt
1 tsp. vanilla
Directions
Grease a 9-inch square pan and sprinkle with 2/3 cup of the chopped walnuts.
In a heavy pan combine the sugars, syrup and 1/3 cup water. Heat, stirring to dissolve the sugars. Cook without stirring until a small amount of the mixture forms a firm ball in cold water. Remove from heat.
Stir in 2-3/4 cup coconut, drained fruit, salt, vanilla and the remaining chopped walnuts. Spread the mixture in a pan and top with the remaining coconut. Cover and chill overnight. Makes 49 squares.
