Caramel Icing
Ingredients
2-1/2 cups brown sugar
3/4 cup water
1 tsp. vanilla
2 tbsp. cream
In a medium saucepan, cook the sugar and water until the syrup forms a soft ball in cold water (about 234 degrees). Allow the syrup to cool then add vanilla and beat until creamy. If the syrup gets sugary, add a tablespoon of cream at a time and continue beating.
