Cheddar Chili Cornbread
Ingredients
5 tbsp. butter or margarine
1-1/2 cups cornmeal
1 cup flour
2 tsp. baking powder
1/2 tsp. salt
1 egg
1/2 cup milk
1 cup grated cheddar cheese
1 can (4 oz.) green chilies
Directions
Preheat oven to 450 degrees F.
Place the butter or margarine into a 9-inch cast iron skillet or similar sized baking pan and place in the oven.
Combine the cornmeal, flour, baking powder and salt in a bowl. In another bowl beat the egg then beat in the milk. Add the flour mixture and stir to blend.
Remove the hot pan from the oven and pour the melted butter into the batter. Stir briefly, then add the cheese, chilies and stir to blend evenly.
Pour or scrape the batter into the pan and bake for 20 minutes. Serves 8.
