Chewy Chocolate Oatmeal Cookies
Ingredients
1/2 cup cocoa
1/2 cup butter or margarine, melted
1 can (14 oz.) sweetened condensed milk
2 eggs, beaten
2 tsp. vanilla extract
1-1/2 quick cooking oats
1 cup biscuit baking mix
1/4 tsp. salt
1 pkg. (10 oz.) chocolate chips
Directions
Preheat oven to 350 degrees F.
In a large mixing bowl, stir the cocoa and butter together until smooth. Stir in the remaining ingredients until well blended. Allow the dough to stand for 10 minutes.
Drop by heaping teaspoonfuls onto lightly greased baking sheets. Bake 7 to 9 minutes or until set (do not overbake). Cool for 5 minutes then remove from the baking sheets. Cool completely. Store in a tightly covered container. Makes about 4 dozen cookies.
