Chicken Divan
Ingredients
1 bunch broccoli or 1 package frozen broccoli
1-1/2 cups thick white sauce
1/4 cup melted butter
2 egg yolks, beaten
1 tbsp. sherry wine
1 lb. sliced cooked chicken
Parmesan cheese
Directions
Cook broccoli to desired tenderness.
Thin the white sauce with the melted butter. Blend a small amount of the white sauce with the egg yolks. Add the egg yolks slowly to the hot mixture. Mix well and add the sherry wine.
Place cooked broccoli in bundles on a hot heat proof platter. Place the chicken slices over the broccoli. Pour the sauce over the chicken and broccoli then sprinkle with the Parmesan cheese.
Place under a broiler, having the top of the food between four and six inches from the heat source. Broil for one to two minutes or until delicately browned. Serves 4.
