Chinese Almond Cookies
Ingredients
6 cups flour
2-1/2 cups sugar
5 eggs, slightly beaten
2 tbsp. almond extract
2 tsp. baking soda
1/2 tsp. baking powder
2-1/4 cups lard or shortening
almond halves
Directions
Combine all ingredients except the almonds then knead together. Shape into small balls and place on an ungreased cookie sheet. Flatten each with the bottom of a glass dipped in water. Brush each cookie with a little beaten egg yolk and place an almond half in the center.
Bake at 350 degrees for 15 minutes or until golden brown. Makes about 4 dozen cookies.
