Chipotle Pico de Gallo
Ingredients
1 cup medium diced tomatoes, seeds removed before dicing
4 tsp. minced red onion
1/2 tsp. red wine vinegar
1/2 canned chipotle chile, minced
salt to taste
1 tbsp. cilantro, cut in thin strips
Directions
Combine all ingredients and mix well. Use immediately or store in a covered container in refrigerator for up to 2 days. Makes 1 cup.
