Chocolate Nut Mousse
Ingredients
4 oz. sweet cooking chocolate, melted and cooled
1/4 cup finely chopped nuts, walnuts or pecans
4 eggs, separated
1/8 tsp. salt
Whipped cream (optional)
Directions
Combine the chocolate and nuts, then set aside. Beat the egg whites and salt with an electric mixer at high speed until stiff but not dry. Set aside. Beat the egg yolks until thick and lemon colored, then stir in the chocolate-nut mixture. Fold into the whites until very well blended.
Spoon into four individual dessert dishes. Chill for at least 2 hours. Serve with whipped cream if desired. Makes 4 servings.
