Chocolate Sauerkraut Cake
Ingredients
1 pkg. (6 oz.) semisweet chocolate pieces
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 cup sauerkraut, drained, rinsed and chopped very fine
1/2 cup butter, softened
1-1/4 cups sugar
1 tsp. vanilla
2 eggs
3/4 cup water
Directions
Melt the chocolate pieces over hot water and set aside.
In a small bowl mix the flour, baking powder, baking soda and salt and set aside.
In a large bowl combine the butter, sugar and vanilla and beat until creamy. Add the eggs one at a time, beating well after each addition. Add the flour mixture alternately with the water. Blend in the melted chocolate. Fold in the sauerkraut. Pour the batter into two 8 or 9 inch cake pans and spread evenly.
Bake at 350 degrees for 35 to 40 minutes.
Cool the cake for 10 minutes. Remove the cake from the pans and allow to cool completely. Fill and frost with Velvet Frosting.
