Coconut Pastel Bonbons
Ingredients
1 pkg. (3 oz.) soft cream cheese
2-1/2 cups powdered sugar
1/4 tsp. vanilla
1/3 to 1/2 cup grated coconut
dash salt
few drops green or desired food coloring
Directions
In a medium sized bowl, beat the cream cheese with a wooden spoon until it is smooth. Gradually add the sugar and blend thoroughly. Beat in the vanilla and salt. Add only enough of the food coloring to make a very delicate shade. Chill for one hour.
Shape rounded teaspoonfuls of the mixture into balls and roll them in coconut. Place on a cookie sheet, cover with waxed paper and chill until firm. Makes 20 bonbons.
