Cole Slaw Souffle
Ingredients
1 8-oz. can crushed pineapple
1 3-oz. pkg. orange gelatin
3/4 cup boiling water
3/4 cup mayonnaise
1 cup finely shredded cabbage
1 cup shredded carrot
1/2 cup raisins
1/2 cup chopped walnuts
3 egg whites, beaten stiffly
Directions
Drain pineapple, reserve liquid. Dissolve gelatin in hot water then add the reserved liquid. Chill until partially set.
In a large bowl, beat the gelatin until fluffy. Add the mayonnaise. Fold in the pineapple, cabbage, carrots, raisins and nuts. Then fold in the egg whites. Chill until set.
