Corn Pancakes
Ingredients
1 cup milk
1 egg
1 tbsp. vegetable oil
1/2 cup whole kernel corn, drained
1 cup pancake mix
Directions
Put milk, egg and oil in a blender jar. Add the corn and pancake mix. Blend until the batter is fairly smooth. Pour onto a hot, lightly greased griddle. Bake until golden brown, turning just once. Makes 8 pancakes.
