Cranberry Chocolate Chip Oatmeal Cookies

Ingredients
1-1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
3/4 tsp. ground cinnamon
2-1/2 cups old-fashioned oats
1 cup butter or margarine, softened
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 tbsp. honey
2 tsp. vanilla
1-1/3 dried cranberries
1 cup semi-sweet chocolate chips

Directions
Preheat oven to 350 degrees.

Blend the flour, baking soda, salt and cinnamon together in a medium sized bowl. Stir in the oats then set aside.

Using an electric mixer at a medium high speed, beat the butter and sugars together until light and fluffy. Beat in the eggs one at a time. Add the honey and vanilla and beat until well blended. Add the flour mixture in two sections and beat until combined. Stir in the cranberries and chocolate chips.

Drop by heaping tablespoonfuls onto a lightly greased cookie sheet. Bake at 350 degrees until lightly browned, about 11 minutes. Allow to cool on the cookie sheet for about 5 minutes then transfer to a wire rack and let cool completely. Makes about 3 dozen cookies.
