Cranberry Fruit Bread
Ingredients
2 cups flour
1 cup sugar
1-1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3/4 cup orange juice
1 egg, well beaten
2 tbsp. shortening
2 tbsp. orange peel, grated
1 cup cranberries, coarsely chopped
1-1/2 cups chopped nuts
Directions
Mix together the flour, sugar, baking powder, salt and baking soda. Add the orange juice, egg, shortening, orange peel to the dry ingredients. Mix well. Stir in the cranberries and nuts.
Turn the batter into a 9x5 inch pan that has had only the bottom greased.
Bake at 350 degrees for 55 to 60 minutes, or until a toothpick inserted comes out clean.
