Cranberry Nut Bread

Ingredients
2 cups flour
1 cup sugar
1-1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3/4 cup orange juice
2 tbsp. vegetable oil
1 tbsp. grated orange peel
1 egg, well beaten
1-1/2 cups fresh cranberries, coarsely chopped
1/2 cup chopped walnuts or pecans

Directions
Preheat oven to 350 degrees F. Grease a 9x5-inch loaf pan.

Mix together the flour, sugar, baking powder, salt and baking soda in a medium size mixing bowl. Stir in the orange juice, oil, orange peel and egg. Mix until well blended.

Stir in the cranberries and nuts. Spread evenly in the loaf pan.

Bake at 350 degrees F. for 55 minutes or until a wooden toothpick inserted in the center comes out clean. Cool on a wire rack for 15 minutes before removing from the pan, then allow to cool completely. Makes one loaf.
