Creamy Tomato Aspic
Ingredients
3/4 cup canned tomato soup (undiluted)
3 packages (3 oz. each) cream cheese
1/4 tsp. salt
2 packages (3 oz. each) lemon flavor gelatin
2 cups boiling water
1 cup salad dressing
1 small green pepper, cut fine
1 small onion, cut fine
1/2 cup diced celery
Directions
Bring the soup just to a boil. Remove from heat, add cream cheese and salt. Stir until dissolved.
Dissolve gelatin in hot water and add to the soup mixture. Chill until partially set, add the salad dressing and vegetables. Pour into mold and chill until set.
The tomato aspic can be molded in a ring mold with shrimp placed in the center when served. Serves 8.
