Curried Egg and Bean Sprout Salad Sandwich

Ingredients
6 eggs, hard-cooked and peeled
1/3 cup mayonnaise
1/2 tsp. curry powder
1/4 tsp. salt
1/2 tsp. dry mustard
12 slices wheat bread
1 cup canned bean sprouts, drained and rinsed
1/2 cup coarsely grated carrots

Directions
Mash the eggs in a medium sized bowl. Add mayonnaise, curry powder, salt and dry mustard and mix well. Spread the egg mixture on 6 slices of bread, top with bean sprouts, carrots and remaining bread slices. Makes 6 sandwiches.
