Curried Sweet Potato Salad

Ingredients
2 sweet potatoes, peeled and cut into cubes
2 Idaho potatoes, peeled and cut into cubes
3 tbsp. mango chutney, finely chopped
1 cup mayonnaise
3 tbsp. curry powder
4 scallions (or green onions), thinly sliced
1 tbsp. fresh chopped parsley
salt and pepper to taste

Directions
Bring a large stockpot of water to a boil. Boil the Idaho potatoes for 4 minutes, then add the sweet potatoes and cook for another 6 minutes. The potatoes should still be a bit firm, not mushy. Drain the potatoes and allow them to cool on a baking sheet.

Using a large bowl, combine the chutney, mayonnaise, curry powder, scallions, parsley, salt and pepper. Gently fold in the cooked potatoes and mix to coat them evenly.

Serve at room temperature. Makes 6 servings.
