Dainty Nut Balls
Ingredients
2/3 cup butter, at room temperature
3 tbsp. granulated sugar
1 tsp. vanilla extract
1 cup coarsely chopped pecans or walnuts
1 cup plus 1 tbsp. all-purpose flour
Directions
In a small mixing bowl beat the butter with the sugar. When creamy, stir in the vanilla and nuts, and then the flour. When the mixture is well blended, cover and chill until firm for 2 hours or more.
Butter 2 baking sheets and dust with flour. Heat oven to 375 degrees F.
With floured hands, roll teaspoonfuls of the dough into balls and place on the prepared baking sheet. Bake for 8 to 10 minutes, or until a light golden brown. Remove from oven and let the cookies cool for 5 minutes before transferring to wire racks to cool completely. Makes about 45 cookies. These cookies can be stored in an air-tight container at room temperature.
