Date, Nut and Banana Sandwich

Ingredients
1/2 cup orange juice
1-1/4 cups dates, pitted and chopped
1/2 cup walnut meats, chopped
8 slices cracked-wheat or white bread
2 small bananas, peeled and sliced 1/2-inch thick

Directions
Put 3 tablespoons of the orange juice, half of the dates and half of the walnuts in an electric blender. Cover and blend at high speed until the mixture is spreadable yet still lumpy. Transfer the blended mixture into a small bowl and repeat with 3 more tablespoons of orange juice and the remaining dates and walnuts.

Spread about 2 tablespoons of the date-nut mixture on each bread slice. Arrange banana slices on 4 slices of the bread, sprinkle with orange juice, and complete sandwiches with the remaining 4 slices of bread. Makes 4 sandwiches.
