Double Coated Chicken
Ingredients
4 cups puffed rice cereal
1 tsp. paprika
1 egg
3/4 cup milk
1-1/2 tsp. salt
1/4 tsp. pepper
1 tsp. poultry seasoning
3 lb. frying chicken pieces, cleaned and dried
3 tbsp. melted butter
Directions
Crush rice cereal to make 2 cups of crumbs. Place in a shallow pan. Stir in paprika and set aside.
In a second shallow pan, beat egg and milk until foamy. Add flour, salt, pepper and poultry seasoning. Mix until smooth.
Dip chicken pieces in the milk mixture, then coat with the cereal mix. Place in a single layer, skin side up, in a well greased or foil lined shallow baking pan. Drizzle with melted butter.
Bake uncovered at 350 degrees for 1 hour or until chicken is tender. Makes up to 6 servings.
