Eggs by Roy
Ingredients
3 eggs
1/2 tomato, chopped
1-2 green onions, chopped
1/4 cup milk
1-2 corn tortillas, in pieces
Vegetable oil
Salsa of your choice
Directions
Cut or tear tortillas into small pieces. Chop onions and tomato. In a bowl beat eggs as for scrambled. Stir in milk, then add the chopped tomatoes and onions.
In a skillet heat 1 to 2 tbsp. oil and lightly fry the tortilla pieces. When the tortilla pieces are almost crisp pour in the egg mixture and gently stir, cooking as for scrambled eggs. When cooked, serve with salsa.
