Favorite Coffee Cake

Ingredients
1 cup butter or margarine
2 cups sugar
1 tsp. vanilla
1 pt. sour cream
2 eggs
2 cups flour
2 tsp. baking powder
1/4 tsp. salt
topping (below)

Directions
Using a mixing bowl, combine the butter, sugar, vanilla and sour cream then mix with an electric mixer. Mix in the eggs, one at a time. Fold in the flour, baking powder and salt using a spoon. Set the batter aside while preparing the topping.

After the topping has been prepared, preheat the oven to 350 degrees F. and spray a bundt pan with cooking spray.

Pour in 1/2 of the batter then layer with 1/2 of the topping. Repeat layering with the batter and topping, pushing the topping into the batter.

Bake at 350 degrees F. for 55 minutes but do not overbake. Turn out of the pan immediately and serve.

Topping

Ingredients
2/3 to 1 cup chopped walnuts
4 tbsp. brown sugar
1 tsp. cinnamon

Directions
Mix together the walnuts, brown sugar and cinnamon. Taste and add more of any of the ingredients if desired.
