Featherweight Pancakes
Ingredients
3 eggs, separated
1/4 tsp. salt
1/4 cup flour
3/4 cup cottage cheese
Directions
Heat a griddle slowly. Beat the egg whites until stiff peaks form. Beat the egg yolks until lemon colored. Stir in the salt, flour and cottage cheese. Fold in the egg whites. Drop by spoonfuls onto lightly greased griddle. Cook until golden brown on both sides. Serve with butter and maple syrup.
