Fresh Apple Custard Pie

Ingredients
1 9-inch unbaked pie crust
1-1/2 cups sour cream
1 can (14 oz.) sweetened condensed milk
1/4 cup frozen apple juice concentrate, thawed
1 egg
1-1/2 tsp. vanilla extract
1/4 tsp. ground cinnamon
3 to 4 medium size apples, cored, pared and sliced
2 tbsp. butter or margarine

Directions
Preheat oven to 375 degrees F. Bake the pie crust for 15 minutes.

In a small mixing bowl, beat the sour cream, sweetened condensed milk, apple juice concentrate, egg, vanilla and cinnamon until smooth. Pour into the prepared crust then bake 30 minutes or until set. Allow to cool.

In a large skillet, cook the apple slices in butter until tender-crisp. Arrange on top of the pie, then drizzle with Apple Cinnamon Glaze (below). Serve warm or chilled. Refrigerate leftovers. Makes one 9-inch pie.

Apple Cinnamon Glaze

Ingredients
1/4 cup frozen apple juice concentrate, thawed
1 tsp. cornstarch
1/4 tsp. ground cinnamon

Directions

In a small saucepan combine the apple juice concentrate, cornstarch and cinnamon and mix well. Cook and stir over low heat until the mixture has thickened.
