Fresh Fruit Candy
Ingredients
2 cups fresh cranberries
1-1/2 tsp. grated orange peel
3/4 cup orange juice
3 envelopes plain gelatin
1/2 cup sugar
1 cup chopped walnuts
Directions
In a 2 quart pan combine the cranberries, orange peel and orange juice. Cook for approximately 15 minutes until the berries pop open. Allow to cool.
Blend the berry mixture in a blender until it has a smooth consistency. Strain the mixture and discard any residue.
Add the gelatin and sugar then cook for 10 to 12 minutes while stirring frequently. Remove from heat. Add the chopped walnuts then spread the candy in a 5x9 inch pan.
Let stand uncovered overnight. Cut into 1 inch squares and arrange in a single layer on a wire rack. Let dry uncovered another night. The candy pieces can be stored in a loosely covered container for 2 weeks. Makes about 45 pieces.
