Fresh Pear Cake
Ingredients
1/2 cup vegetable oil
1 cup brown sugar, well packed
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. ginger
3/4 cup buttermilk
1 cup golden seedless raisins
2 eggs
1/2 lb. fresh Bartlett pear (about 1 large), diced
Directions
Combine all ingredients and mix until well blended. Pour the batter into a greased and floured baking pan.
Bake at 350 degrees for 30 to 35 minutes, or until the cake tests done. Allow the cake to cool then frost with Cream Cheese Icing.
Cream Cheese Icing
Ingredients
6 oz. cream cheese
1/4 cup butter
2 cups powdered sugar
3/4 tsp. vanilla
2 tsp. milk
Directions
Beat the cream cheese with the butter until smooth. Beat in the powdered sugar, vanilla and milk until the icing is smooth and spreadable.
