Garden Potato Salad
Ingredients
2 cups mixed canned vegetables
2 cups diced cooked potatoes
1/4 cup sliced green peppers
1/4 cup diced sweet pickle
1 bunch green onions, cut into 3/4 inch pieces
6 salami slices
3 eggs, hard cooked and sliced
3/4 cup mayonnaise
2 tsp. horseradish
dash hot pepper sauce
1-1/4 tsp. salt
lettuce leaves
Directions
Drain vegetables thoroughly. Combine with potatoes, green pepper, pickle, green onions, 4 slices of salami (cut into strips), and two of the eggs. Chill thoroughly.
Mix together mayonnaise, horseradish, hot pepper sauce and salt. Add to the chilled mixture and toss lightly.
Line a chilled salad bowl with lettuce leaves and fill with salad. Garnish with the remaining salami slices and egg slices. Serves 4 to 6.
